The Oregon Youth Authority values culturally competent staff to provide a continuum of services to our diverse clientele.
 
GENERAL INFORMATION
  • The Oregon Youth Authority (OYA) provides services to protect the public and reduce juvenile crime through OYA programs and partnerships with local communities and counties.
  • These positions are  with the Oregon Youth Authority at youth correctional facilities in Albany, Salem, Woodburn, Grants Pass, Burns, Warrenton, Tillamook; work study camps in Florence, Tillamook, Corvallis and LaGrande.
  • This recruitment will be used to establish a list of qualified people.
  • This recruitment is open to anyone meeting the minimum qualifications listed below.
  • A pre-employment assessment is a required element of the application process.
  • Applicants must complete a pre-employment assessment prior to an interview.
  • This position is designated Police and Fire, with the State Retirement Program.
  • Testing for Tuberculosis is required for this position.

TO QUALIFY
 
Your application form (PD 100) will be reviewed to verify that you meet the qualifications stated in this section.  To receive credit, your application form must clearly show that you have:
  • two years experience as a cook in an institution or commercial firm serving complete meals; or
  • an Associate’s degree in Food Service Management, Foods and Hospitality Service, or a directly related field.
DUTIES AND RESPONSIBILITIES
 
This position is located in a close custody facility. This position includes the preparation of and serve of nutritious, appetizing meals. Ensuring sufficient, adequate, appropriate food products, kitchen items and supplies are available. Supervise and train youth offenders in the preparation and servicing of meals within all required and acceptable health and sanitation standards while maintaining the safety, health and well being of youth offenders.
 
Major Duties:
  • Supervises and trains youth offenders in preparation serving and cleanup of meals.
  • Controls behavior of youth and follows all safety and security procedures including notification of security staff as needed. Relays pertinent information to living units, security staff, Treatment Manager/Camp Director and Program Manager.
  • Works independently using common OYA menu and standardized recipes to cook, prepare and coordinate nutritious, appetizing, visually appealing meals every day. Adjusts menus and recipes to meet site population needs including re-evaluating changes for nutritional content, and staying in compliance with federal USDA guidelines.
  • Prepares special diets for medical, dental and religious needs.
  • Performs daily cooking tasks, provides instruction and makes preparations utilizing a variety of equipment such as: washing, chopping, slicing, cutting and dicing of foods.
  • Requisitions food products, checks inventory when delivered for accuracy and quality, and ensures equipment is accurate. Makes sure that dated stock is properly rotated to minimize waste. Informs supervisor of special equipment and food concerns or needs. Maintains required records of meals serviced and quantities prepared for the Federal Food Program. Records supply usage for inventory and records purposes. Insures that all monthly requisitions do not exceed allocated budget. Works with other Cook 2’s to ensure all meals are prepared in accordance with Federal and State guidelines. Completes Accuclaim report daily. Maintains kitchen sharp count daily, and other counted items as needed. Writes daily in the log book on count and any missing items.
  • Assumes other related duties such as: kitchen, laundry, inventory of food, equipment and supplies, etc. Receives and stores these supplies.  Trains new staff in daily responsibilities. Provides necessary food service support during special occasions and requests.
WORKING CONDITIONS
 
1. Daily contact with youth offenders who may exhibit hostile, assaultive behavior. These positions are located in close custody facilities which require, as a primary responsibility, strict adherence by each employee to security measures at all times to assure the custody, control and supervision of youth offenders.
2.  Walk and stand for long periods;
3.  Use commercial cooking equipment such as slicers, mixers, choppers, etc
4.  May work with and around microwave ovens;
5.  May require valid Driver’s License and acceptable driving record
6.  OYA Facilities are non smoking facilities.
 
THIS IS THE TEST

If there are several parts to a question, answer each part separately.  Number your answers to agree with the questions.  Attach the answer sheet to your application. Your application will not be accepted if it is incomplete.
 
1.  Describe the education and/or experience which has given you knowledge of the principles, policies, procedures and state regulations of food preparation and cooking in a volume dining/food service setting. Include your experience in adjusting and standardizing recipes, maintaining production within schedules, and participating in menu planning, recipe development and testing.
 
2.  Describe your experience and level of responsibility in:
a) the use of kitchen equipment and materials in a volume dining/food service  setting;
b) operating commercial kitchen equipment; and
c) the use of hazardous chemicals and disinfectants in relation to kitchen equipment and dining areas. Be sure to include your description the types of equipment involved.
